I've always rolled my ankles over to get the knee closer to the ground. Maybe try out some of the hook style pegs, this will help. I tend to never ever sit in the middle of the bike, always move early in preparation for the next turn. One thing we've done with the juniors over here is get them to ride around in circles, slowly getting faster and faster hence more and more lean angle. Once you start getting close the black art of counter steering comes into play. Just push lightly away from you on the inside bar (left corner/left bar) and the bike will magically drop over further into the turn.
Try the riding around in circles thing mate, you'll get there, as CLaw stated PRACTICE, PRACTICE, PRACTICE!!!!!!
