Dell'Orto do not tune their carbys to suit any engine, this is up to each purchaser and their application for the carby.
Ben, the carby is fine the jet maybe a little large for a standard cag, but would not be your problem.
The problem will be dirt within the carby, from your fuel or fuel lines.
I would say the idle circuit is blocked, making it run lean.
You will need to pull the carby totally apart, then blow all parts out with a high pressure compressor, then put it all back together.
After this it should run okay.
